What is it:

Brown stewed chicken also referred to as stew chicken, is typically eaten for dinner throughout the English speaking Caribbean islands. This dish is popular in Jamaica, Antigua, Trinidad and Tobago, Barbados, Saint Lucia, Grenada, Belize, Dominica and in Caribbean communities throughout the the world.

 

This is done by frying the chicken until dark brown then stewing with seasoning with water, scotch bonnet peppers, onions, scallion, garlic, thyme and other seasonings until the gravy has a nice consistency. This is the most popular Sunday dinner served with rice and peas.
