What is it:

Jamaican Roast Jerk Fish is one of the most delicious and simple ways to cook fish. The cavity of the fish is stuffed with seasonings, including Jamaican jerk sauce to concentrate the flavors inside. The fish meat is tender and juicy. Wash fish with vinegar and water.

 

Pour your favorite jerk seasonings in a bowl. Dice onions, thyme, escallions, scotch bonnet pepper and garlic. Wash okra or callaloo, combine all and mix in the bowl, add black pepper, pimento and stir. Dry and place each fish on a sheet foil, stuff each fish with the seasoning mixture, wrap fish completely with foil. Roast each side on open grill for 15 minutes, or in an oven at 350 degrees for 40 minutes.
